When I get a sweet tooth, this is the quickest and easiest dessert to throw together.
I love the rich and creaminess of the peanut butter and the chewiness of the oats in this cookie. Honey is optional, and typically I’ll omit it since I think applesauce is sweet enough to hit the spots. But, flavor how you wish!

Ingredients:
½cuporganic peanut butter
¾cuprolled oats or oat flour
2tbspunsweetened applesauce
¼tspsea salt
½tspbaking soda
2tbspraw honey (optional)
Directions:

Preheat the oven to 350°. Grind the oats in a food processor or blender until it becomes a fine powder. This step is optional, but recommended.

Mix the wet ingredients together well. Add the dry ingredients and mix well till combined.

Spoon dough into balls on parchment paper. Bake for 8 minutes. Remove from oven. Cookies will look a little undercooked, but they will continue to harden while cooling.

After about 5 minutes, use a fork or spatula to press down lightly on the cookie. Allow to cool a few more mins and enjoy alone or with a refreshing glass of oat milk!
