Whole30 One-Pan Beef + Veggie Bolognese

 1 lb grass-fed beef (or turkey)
 1 organic eggplant, cubed
 1 organic zucchini, cubed
 2 organic vine tomatoes, chopped
 1 tbsp tomato paste
 ½ cup fresh basil, chopped
 salt + pepper to taste
 extra virgin olive oil

Heat a large skillet over medium heat and add beef and seasonings. Stir frequently and break up the meat with your utensil and cook unti lightly browned.

Empty from pan and drain excess juice. Return pan to heat and heat olive oil.

Add the eggplant, zucchini, seasoning and leftover juices from the meat. Allow to cook until tender.

Add meat, tomatoes, tomato paste and 2/3 of the basil. Simmer, covered or uncovered for about 15 minutes.

Serve warm, room temperate or cold with remaining basil.
