Lemon Mint Sauce (Great for Fish + Seafood)

I'm not sure if you've ever grown fresh mint in your garden, but if you have then you know that it grows like wildfire! There's only so many pitchers of iced teas I can make, so I was thinking of a fresh way to incorporate it into some dishes and I really am pleased with the way this marinade came out.

I brushed this marinade on wild caught shrimp skewers and kept some extra for sauce on top of my bowl of tossed greens and quinoa. Was so fresh, light and delicious I cannot wait to try it again on swordfish!

 1 cup fresh mint leaves (packed)
 ¼ cup cold pressed extra virgin olive oil
 juice of 1 lemon
  tsp lemon rind
 ¼ tsp Himalayan pink salt or sea salt (to taste)
 ¼ tsp fresh pepper

Wash, dry and chop mint leaves until fine.

Add all ingredients to a jar and give it a vigorous shake, or place everything in a food processor and blend well.
