Last week I bought a 3-pack of this farm to family Butterball organic ground turkey meat I found at Costco. I just defrosted one package (1 lb) yesterday to meal prep with since I planned on cleaning my stove later today.
I wasn’t sure what exactly I wanted to do, but I was thinking a meatloaf or fritter. I went with meatloaf considering I also had a few zucchini’s I wanted to use. I was cleaning the zucchini when it came to me —- use this inside the meatloaf! I know the water and juices from the veggie gives great moisture to your dishes, so I decided to shred them and use them as a part of my main dish, not the side.
I started with 4 small green zucchini squash with the tops cut off. I shredded them by hand and let them sit in a large mixing bowl. From there, I added one extra egg to the mix than i normally to (to help bind) and I eyeballed the almond meal in place of breadcrumbs. Used seasonings to my liking and topped with an additional layer of almond meal for a crunchy top layer (owe this meatloaf trick to my Momma).
40 minutes later, this beauty surpassed my expectations. I am so excited to share that I had to snap some quick pics (took a few savory bites while photographing) and here we are.

Preheat oven to 375°. Grate zucchini and set aside in a large mixing bowl.
Lightly brown onion is garlic and allow to cool before adding to zucchini.
Add the remainder of the ingredients to the bowl and mix well.
Pour mixture into a lightly greased meatloaf pan and top with additional almond meal (mixed with spices) and drizzle olive oil over the surface. Bake for about 40 mins and broil for about 90 seconds to brown the top.
Allow to cool, slice and serve.
