Ingredients:

 2 ripe bananas
 ½ cup unsweetened applesauce
 ½ cup natural peanut butter (or nut butter of choice)
 ¼ cup pure maple syrup
 ¼ tsp pure vanilla extract
 1 tsp cinnamon
 ¼ tsp sea salt
 1 ½ cups old fashioned rolled oats
 ¼ cup unsweetened shredded coconut

Directions:

Preheat the oven to 350°. Combine all wet ingredients. Beat with a hand mixer until smooth.

Stir in remaining dry ingredients and mix well until combined.

Arrange scoops of dough into parchment paper and bake for about 10-12 minutes, or until golden brown.

Shut off the oven and allow to bake another 1-2 minutes.

Remove from oven and allow to cool on a baking rack for at least 10 minutes, or until slightly hardened.
