This “bread” is really not bread at all! Made with simple science of combining baking soda with vinegar and eggs create this fluffy and delicious bread.
It’s simple, quick and tastes great by itself or with a slather of nut butter and fruit. I also like it with some Greek yogurt and berries, makes a great small lunch or lite snack.
The honey drizzle on top is optional, but highly recommended! It also lends to this beautiful marbleized top!

Preheat your oven to 350°. Add baking soda and apple cider vinegar to a medium mixing bowl. Allow to fizz, about 1 minute.
Add all remaining ingredients (except honey) to the bowl and whisk by hand or with a hand blender for about 2-3 minutes, or until smooth.
Pour into a parchment paper lined bread pan. Drizzle the top with honey.
Bake in the center of the oven for about 35-40 minutes.
Remove from oven and allow to cool on a rack. Slice and store in the refrigerator for up to 4 days. Also freezes well.
