I'm excited to share my sweet, tart and simple Blueberry Coconut Granola recipe. Loaded with antioxidants and fiber, say goodbye to added refined sugars and chemicals in packaged granola and quickly whip this up and enjoy the same great taste-- if not better.

Ingredients:

 2 cups whole grain rolled oats
 ½ cup unsweetened coconut flakes
 1 tsp ground cinnamon
 1 pinch Himalayan pink or sea salt
 2 cups fresh organic blueberries
 2 tbsp coconut oil (melted)
 1 tbsp 100% pure maple syrup
 ½ tsp almond extract

Directions:

Preheat oven to 300 degrees.

Mix oats, blueberries, coconut flakes and cinnamon together.

In a separate bowl, warm the coconut oil until its melted and whisk in the maple syrup, almond extract and sea salt.

Pour wet ingredients over dry ingredients and mix carefully with a rubber spatula.

Lay in a thin layer on a cookie sheet with a silicone baking mat or parchment paper.

Bake, stirring every 15-20 minutes for about 60 minutes, or until golden brown. Allow to cool and crisp. Store in an airtight container or jar in the refrigerator.

Notes: Adding additional syrup will create a stickier granola. Modify according to your preference.
