3 words. 30 minutes. 1 skillet. Easy, quick and delicious! Like many of you, the last thing I want to do when I come home from a long day of work is take an hour or more to prepare a meal and clean up the mess. I hate that it takes me longer to cook the food and clean it up than it takes for me to eat the food! So... that's why I love quick and easy meals after a busy day... especially ones that require only one pan to clean after! Not to mention, the left overs (if there are any) are perfect to dress up with different sides and eat for the rest of the week!

I know everyone's preferences and taste buds are different, so I am happy to share these ingredients can be swapped in a number of ways. In the photo above, you'll see I started with zucchini and yellow squash, after contemplation my tummy was telling me it wanted mushrooms instead hence, the final photo with mushrooms... not squash. If you're more a turkey or chicken gal (or guy) opt for organic ground turkey or organic ground chicken instead. The cook time may change just a bit, but not too drastically.

Whenever I eat red meat, I like to pair it with dark, leafy greens. The baby spinach in the recipe has a ton of fiber that helps you digest the meat. I paired my meal with Butternut Squash Puree, its packed with iron and even more fiber. You can pair your meal with cauliflower, white rice, sweet potatoes, quinoa or anything else that comes to mind (or is in the fridge!)

Now... let's get into the benefits of a few of these tasty ingredients so you can head into the kitchen and start cooking!

Spinach:
• Spinach has large quantities of vitamin A, which moderates the production of oil in the skin pores and hair follicles to moisturize the skin and hair.

• Spinach is one of the best sources of dietary magnesium, which is necessary for energy metabolism, maintaining muscle and nerve function, regular heart rhythm, blood pressure and a healthy immune system.

• Spinach is high in fiber and water, both of which help to prevent constipation and promote a healthy digestive tract.

100% Grass-Fed [Organic] Beef
• Beef from grass-fed cows contains a specific beneficial fatty acid called CLA (conjugated linoleic acid). Grass-fed beef contains about 2x the amount of CLA compared to beef from grain-fed cows. CLA is one of the only anticancer nutrients derived from meat.

• Helps with depression: Researchers have seen an increase in mental well-being by supplementing with omega–3 fatty acids.

• Helps you focus: Recent studies conducted show omega–3s to be a promising alternative to alleviate attention deficit disorders (ADHD) over stimulant medications.

Ingredients:

 1 lb 100% grass-fed organic ground beef (85% lean)
 1 cup sliced organic white mushrooms
 4 cups organic baby spinach
 ¼ tsp Trader Joe's herbs de Provence
 1 ½ tbsp organic coconut aminos
 fresh ground salt and pepper to taste

Directions:

Heat large skillet on medium heat. Add ground beef and seasonings.
Using a fork break up the ground beef and gently press it into the end of the pan. Sautee for 3-5 minutes.

Add sliced mushrooms and mix into ground beef. Cook until meat is browned, stirring often.

Drain excess water from skillet. Add in a few handfuls of baby spinach. Mix into the rest of the ingredients, allowing the spinach to wilt. Once the spinach is wilted and there is more room in the pan, mix the rest of the spinach into the ingredients.

Add coconut aminos, reduce heat to simmer and cover for 3-5 minutes.

Serve while hot. I accompanied mine with butternut squash puree. Feel free to be creative with your side.

Ingredients
