If you're a nut butter fan, these brownies may become your new guiltless go-to. I have always been a little hesitant to bake with dinner items such as sweet potatoes. That all changed when I entered a life filled with food intolerance's and I was forced to experiment.

When my assistant came to work with these delicious, dense brownies, I knew I wanted to tweak the recipe a bit and share it with you guys! I took one bite and a few moments later, I found myself back at the container for another bite... I wasn't mad about it, they're that good AND refined sugar-free.

I don't want to disappoint you so I will warn you, if you're expecting a warm gooey Ghirardelli tasting brownie this may take some getting used to. Don't give up on it after the first bite! As you eat healthier you'll realize your taste buds begin to change and healthy treats taste just as sweet to you as a delicious nestle Tollhouse cookie tasted to you before you switched your lifestyle.

So, lets get right to the benefits of these fueling ingredients so you can head to the kitchen and whip up a batch!

Organic Sweet Potato Benefits:
• Their high fiber content makes them a slow burning starch—meaning they won’t spike blood sugar and insulin levels.
• Containing an array of vitamins and minerals including iron, calcium, selenium, and they're a good source of most of our B vitamins and vitamin C.
• One of the key nutritional benefits of sweet potato is that they're high in an antioxidant known as beta-carotene, (which may reduce inflammation) which converts to vitamin A once consumed.

Cocoa Powder Benefits:
• Unsweetened cocoa powder is filled with calcium, copper, iron and magnesium and is a good source of protein and dietary fiber.
• Loaded with rich polyphenols (natural antioxidants) known to improve blood flow, lower blood pressure and regulate cholesterol levels.
• Contains plant-based compounds called flavonoids – especially catechin, epicatechin and procyanidin. This powerful trifecta works to relax blood vessels and lower blood pressure and reduce the risk of heart attack and stroke.

Natural Nut/Seed Butter Benefits:
• Fiber and protein found in nuts leads to greater satiation.
• A great source of healthy fats to keep you satisfied.
• Not all nut butters have healthful ingredients. Many brands contain only ground-up nuts, but some include added salt and sugar. Some use partially hydrogenated oil — a source of unhealthy trans fats, so be sure to check the label before selecting a nut butter.

Ingredients:

 1 cup organic mashed sweet potato
 ½ cup any nut or seed butter of choice (almond, peanut, sunflower, etc.) - only natural varieties
 2 tbsp raw honey
 ¼ cup unsweetened cocoa powder
 2 tbsp ground cinnamon
 handful of Enjoy Life or carob chips (optional)
 1 pinch sea salt (optional)

Directions:

Preheat oven to 350 degrees.

On the stove, combine nut butter and honey on low heat. Continuously mix until the two are combined and smooth. Remove from heat.

In a large bowl, mix the mashed sweet potato, cocoa powder, cinnamon and nut butter & honey mixture. Mix well with a rubber spatula. If using, fold in Enjoy Life chocolate chips or carob chips.

Line a pan with parchment paper or lightly greased with coconut oil and pour mixture in. Sprinkle with sea salt (optional). Bake for 20 minutes or until a tooth pick comes out of the center clean.

Allow to cool completely before slicing. Store in the fridge.
