Ingredients:

 2 cups whole grain rolled oats (I use Gluten Free)
 ½ cup chia seeds
 ¼ cup ground flax seeds (or flax meal)
 1 tsp sea salt
 ¼ cup natural peanut butter (I use salted and chunky)
 ¼ cup organic coconut oil
 ¼ cup raw honey
 1 tbsp natural vanilla extract

Directions:

Preheat oven to 275° and line two large cookie sheets with parchment paper.

In a large mixing bowl, mix all dry ingredients together.

In a separate small bowl, combine remaining wet ingredients and warm in the microwave for 30-60 seconds. Alternatively, you can heat in a small saucepan on the stovetop.

Add wet ingredients to dry and mix well. If too dry, add more of the wet mixture. If too wet, add more dry.

Spread evenly on parchment paper and bake for about 20-30 mins, stirring well.

Allow to cool and keep in an airtight container.
