Ripe bananas? Banana bread is a no-brainer! But this banana nut bread is my favorite recipe I make over and over, and overrrrrr again! It's super simple, doesn't require much time in the kitchen!

Oats are so versatile in my kitchen, especially when it comes to baking. If you have a high-speed blender or food processor, simply grind up oats to make oat flour or you can always purchase oat flour to keep in your pantry (but I prefer making it on my own to save money). Applesauce (I used unsweetened) provides sweetness and holds a ton of moisture inside this bread. Coconut sugar is my go-to to swap refined-sugar and of course, you don't need that much since your bananas you'll use will be naturally sweet with that extra ripeness!

I like walnuts in banana bread since they are not too crunchy and hold a great texture, but swap for whichever nuts you have on hand or prefer. You can also add a little extra to top the bread.

Be sure to let those bananas soak in the coconut sugar before you start mixing everything up together to really enhance the natural sweetness of the bananas.

Every oven is different, but I bake mine for a solid 45 minutes, or until a toothpick comes out clean from the center.

If you don't have parchment paper to line your bread pan, lightly grease with ghee (clarified butter) or coconut oil.

Ingredients:

 4 medium bananas, ripened
 ½ cup coconut sugar
 ½ cup unsweetened applesauce
 2 eggs
 1 tsp pure vanilla extract
 2 ¼ cups oat flour
 1 tbsp baking soda
 1 tsp baking powder
 2 tsp ground cinnamon
 1 tsp sea salt
 ¾ cup raw walnuts

Directions:

Preheat oven to 350 F. Place bananas and coconut sugar into a large bowl and puree until smooth with electric mixer. Let stand for 15 minutes.

In a medium bowl, mix oat flour, baking soda, baking powder, cinnamon and salt and whisk together.

After letting the bananas and coconut sugar sit for 15 minutes, add applesauce, eggs and vanilla extract and beat well. Slowly add the dry mixture to wet and mix thoroughly. Once blended, fold in walnuts with a spatula.

Pour into a 9" x 5" loaf pan lined with parchment paper. Bake for 45 minutes, or until a toothpick inserted in the center of the loaf comes out clean.

Remove from oven and allow to sit for about 5-10 minutes before cooling on a wire rack. Cool for another 10-15 minutes, slice and enjoy!
